Soba & Sesame Delight

When it comes to noodles I always opt for soba. Soba noodles is a healthier option as it contains potent plant compound that has many health merits. This buckwheat noodle has been proven to benefit blood sugar, heart health and inflammation as well as cancer prevention.

It is lighter in comparison to pasta and contains less calories as well as more protein than your traditional pasta. So it won’t spike your blood sugar!

For a quick, easy and light dinner, I made a roasted sesame soba noodles with edamame. However, this picture below shows soba noodles being replaced with organic black noodles as we ran out of soba. The result…equally delish.

Here is the recipe.

10 ounces soba noodle

1/3 cup fermented premium dark soy sauce

2 table spoon rice vinegar wine

3 table spoon toasted sesame oil

1/4 freshly ground black pepper

1 table spoon sugar

1 table spoon olive oil

2 cups of green onions chopped finely

3 table spoon toasted sesame seeds

300 gm prawns

1 cup edamame

Instructions

Boil your noodles for 4-5 minutes. Strain and rinse under cold water.

Mix all your ingredients in a mixing bowl and whisk.

Season prawns with salt and pepper. Heat up skillet and pan fry for 3 minutes.

Add mixture into skillet and cook for 30 seconds.

Mix mixture and prawns into a bowl and toss evenly.

Garnish with spring onion and toasted sesame seeds.

Pour yourself a glass of wine and enjoy your noodles. This has to be one of my partner’s favourite meal I’ve cooked for him! Try the recipe. It’s fast, easy and super healthy!
