One of my favourite chicken meals. Baked smoked paprika chicken and a side of mandarin salad under 30 minutes. Eating healthy is not tough when you’ve got simple recipes. My favourite ingredient for this dish is the smoked paprika. I love this spice that I use it in almost all my baked proteins. The tangy and fresh mandarin salad is a delicious combination to this chicken dish.

Here’s the recipe for this meal.

Ingredients

  • 4 skinless chicken breast
  • 1 table spoon smoked paprika (or more based on your preference)
  • 2 table spoon garlic infused oil / olive oil
  • 2 cloves garlic crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • Half freshly squeezed lemon juice

Directions

  1. Whisk all spices, garlic, oil and lemon juice into a bowl
  2. Add the chicken into the mix and marinate for 20 minutes
  3. Pre-heat oven at 350 degrees
  4. Bake chicken for 20 minutes

Tangy Mandarin Salad

Ingredients

  • 1/4 cup almond slivered almonds
  • 5 mandarins segmented
  • 1 head of lettuce

Dressing

  • 2 tablespoons white wine vinegar
  • 3 tablespoons agave or honey
  • 1/2 teaspoon paprika
  • 1/4 cup olive oil
