Date Night Menu

Date nights are different these days with the current Covid 19 crisis. No more dressing up to head out for dinner. It’s either Uber Eats or DIY cooking (which I’m not complaining). So to spice things up and break the norm of the current situation I initiated a ‘home’ date night. The idea is to dress up and pretend that we are dining in a restaurant. I sent him a date night invitation card and requested a RSVP!

Ideally, I was going to prepare a 3 course meal however, I ended up with an entree and main. We had liquid dessert instead. For the entree, I served my date salmon potato cakes and for mains, we had peri-peri prawns with zucchini noodles.

Salmon Potato Cakes

Ingredients
2 medium sized potatoes
1/2 cup chopped smoked salmon
2 tablespoon mayonnaise
1/2 teaspoon lemon juice
1 egg
1 cup panko
Salt and pepper

For the sauce
1 cup greek yogurt
2 tablespoon minced dill
1/4 teaspoon salt
1/4 teaspoon lemon zest
Pepper

Directions
1. Make the sauce: In a small bowl whisk yogurt, salt, dill, lemon zest and pepper to taste. Set aside.
2. Preheat oven to 230C.
3. Peel and chop potatoes. Add in salt and boil it on medium heat till potatoes are soft.
4. In a large bowl, drain and mash the potatoes. Add in chopped salmon, mayonnaise and lemon juice. Add pepper and salt to taste. Form the mixture into 3 inches patties.
5. Whisk egg in a bowl. Place panko crumbs in another bowl.
6. Dip a cake in the egg bowl and then into the panko bowl. Repeat with the remaining cakes.
7. Bake for 40 minutes.

Peri-peri prawn zucchini noodles

Ingredients
250gm prawns
2 tablespoon peri-peri seasoning
4 medium sized zucchini
4 cloves of garlic
2 tablespoon pesto sauce
2 tablespoon of olive oil

Directions
1. De-shell and devein prawns.
2. Season prawns and prawn head with peri-peri seasoning.
3. Heat 1 tablespoon of oil in a large skillet.
4. Add garlic and cook for 30 seconds.
5. Add prawn head and prawns. Cook prawns for 3-5 minutes and remove from skillet. Leave the prawn head for another 10 minutes.
6. Add in 1 tablespoon of oil. Add in the zucchini and toss until hot / 3 minutes.
7. Transfer to bowl and in a large bowl add pesto sauce.
