Ever felt like having a satisfying yet light meal? The best way to fulfill this is to have 70% vegetables 20% protein and 10% fat. Sounds pretty balanced but one would ask where is the carbo in the meal? How do you get satisfied without carbo in meals? The answer is to substitute rice, bread, pasta or your favourite carbo with chickpeas!
Chickpeas are a good source of protein and fiber but also contains 20% carbo for every 100mg. Chickpeas has numerous health benefit which range from weight management to blood sugar control and is considered a superfood.
Using one of my favourite superfood, I decided to make a light but satisfying dish for my meal this week, roasted cauliflower, red onion and chickpeas.
Here is my recipe to this dish.
- 1 cauliflower
- 1 red onion sliced
- 1 can chickpeas
- 1.5 tablespoon smoked paprika
- 1/2 teaspoon tumeric powder
- 1 tablespoon infused garlic oil or olive oil
- Salt to taste
For extra protein, you can serve this dish with baked chicken breast.
Directions
- Pre-heat oven to 200c
- Combine cauliflower, smoked paprika, turmeric, oil and salt into a bowl
- Drizzle some oil on a baking dish and transfer ingredients
- Drain your chickpeas and mixed it into the baking dish
- Bake for 20-25 minutes tossing it once or twice in between cook time
You can never go wrong with this simple and well balanced comfort dish.
