Chicken & Vegetables Broth with Pasta

Quick and easy rarely relates to good food but in this case it doesn’t apply. As the weather cools down drastically, it’s time to grow your heartwarming bank of comfort meals. This recipe is a super easy turbo charged meal to add to your repertoire. It is quick, balanced, healthy, power packed with flavours and undeniably delicious.

Ingredients

1 onion diced
6 cloves of garlic roughly chopped
3 carrots cut into cubes
1 red pepper cut into cubes
2 cups of white button mushrooms sliced
1 tbsp mixed herbs
3 sprigs of lemon thyme
4 pieces skinless chicken thigh cut into 3 cm cubes
1 tbsp of corn flour
Salt and pepper to taste
500 ml free range chicken stock
500 ml vegetable stock
1/2 cup of spiral pasta
1 bunch of broccolini
1tbsp olive oil

Method

  1. In a large pot, heat olive oil on medium heat. Add in onions and saute for 2-3 minutes. Add the garlic and saute for another minute.
  2. Coat chicken with cornflour and pepper.
  3. Add chicken into the large pot and fry for 5 -8 minutes on medium to high heat.
  4. Add in chicken and vegetable stock, diced carrots, diced red pepper, mushrooms and herbs. Let it boil rapidly for a few minutes and continue to simmer for another 25 minutes.
  5. Add the spiral pasta and let it cook for 8 minutes.
  6. Add pepper and salt to taste.
  7. Blanched broccolini in broth for 2 minutes and serve.
