Steam Pork with Anchovies

Steam pork with anchovies is a modification of steam pork with salted fish. I substituted salted fish with anchovies and the result was as good if not better. The amount of anchovies used for this dish is really dependent on how much you love anchovies. In my case, anchovies are my best friend.

This dish is one of my comfort food. Now that the temperature is cooling down having this dish with steam hot rice is really the bomb! It’s a quick and easy dish to cook and I reckon pretty healthy too.

Here is the recipe for my steam pork with anchovies.

  • 12 ounces minced pork
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt (you don’t want to put too much salt as the anchovies itself is salty)
  • 1/8 teaspoon fresh grounded white pepper
  • 1/8 baking soda
  • 2 teaspoon cornstarch
  • 1 tablespoon Shaoxing wine
  • 2 tablespoon water
  • 1/2 teaspoon fresh grated ginger (i love ginger so I used 1 tablespoon)
  • 1 teaspoon minced scallion. Use the white section only
  • 1 can of Ortiz anchovies
  • 1 tablespoon julienned fresh ginger
  • 1 scallion finely chopped

Instructions

  • Add sesame oil, salt, white pepper, baking soda, Shaoxing wine, water, cornstarch, grated ginger, minced scallion, and water chestnuts (if using) to the meat.
  • Use a fork and mix everything together vigorously until the pork mixture becomes sticky and smooth––almost like a paste. Set aside to marinate for 1 hour or more.
  • Transfer the meat to a deep dish plate, forming a kind of thin patty. You must use a deep dish because liquid will pool in the bowl (it’s almost like a thin broth or sauce, and it’s great over rice!).
  • Distribute the slices of anchovies on top of the meat. If you put a lot of anchovies on top, then you may want to eliminate or reduce the salt from the ground meat in the previous step.
  • Spread the julienned ginger across the top of the meat and anchovies and then sprinkle the chopped scallion evenly over the top
  • Steam for 15-20 minutes
  • You’ll see quite a bit of liquid in the plate after cooking. Turn off the heat and let the dish rest for 2 to 3 minutes. Some of that tasty liquid will be reabsorbed into the meat. Spoon the sauce over the top of your pork before servings and enjoy!

My partner had never heard of this dish. He was sceptical initially but after tasting it he is sold. I’m really glad he is open and adventurous when trying new dishes. Happy partner, happy life!
